Featherweight Cupcakes

2 cups sifted cakeflour
2 1/4 tsp baking powder
1/4 teaspoon salt
1 1/4 cup sugar
1/2 cup lard
2 eggs, unbeaten
1 cup milk
1 teaspoon vanilla

Sift flour, baking powder, salt together. Cream lard thoroughly. Add sugar gradually and cream together. Add eggs and beat thoroughly. Add flour alternately with milk, mixing after each addition. Stir in vanilla. Fill lined (paper) muffin pan (one-half full). Bake at 350 degree for 20 to 25 minutes. Makes 18 cupcakes

Frosting:

1 1/2 cups sifted powdered sugar
1/4 cup crisco
3/4 teaspoon vanilla
2 to 3 tablespoon evaporated milk
Few drops of food color if desired

Beat well with egg-beater well until smooth. Spread frosting on cooled cupcakes.
